Successful Weyermann® Specialty Malts for Brewing and Distilling Seminar with Browamator from Poland
In mid-April, we were pleased to welcome a dedicated international group of Polish brewers and distillers to Bamberg. The Weyermann® Specialty Malts for Brewing and Distilling Seminar was held in close cooperation with our Polish distribution partner Browamator. On site, Mateusz Puślecki from Browamator accompanied the seminar and actively fostered professional exchange between the participants and the Weyermann® experts.
The entire seminar was conceptually designed and led by Fedor Nikolashkin, Weyermann® International Malting & Brewing Expert. Through his lectures, discussions and guided tours, he provided the central technical framework of the event.
During the two-day seminar, our guests explored in depth the world of Weyermann® specialty malts for brewing and distilling. The diverse programme combined theoretical fundamentals, practice-oriented modules and guided tastings into a coherent overall concept and offered numerous technical impulses.
A diverse programme with clear technical depth
The first seminar day began at the Weyermann® Guest Centre with an introduction and a company presentation on the production of Weyermann® specialty malts. Under the technical guidance of Fedor Nikolashkin, the participants gained in-depth insights into raw material selection, malting processes and application options for specialty malts.
Heirloom and Terroir malts then took centre stage, complemented by selected lager beer recipes and an accompanying malt and beer tasting, which illustrated the sensory diversity of different raw materials.
Another key focus was the cooperation with FERMENTIS®. Two technical presentations introduced classic SafLager™ dry yeasts as well as SafLager™ SH 45. The topic block Low & Non Alcohol Beer highlighted suitable Weyermann® malt and recipe approaches and was complemented by the presentation of SafBrew™ LA 01 yeast as well as corresponding tastings.
Distillation in focus – from theory to practice
In the afternoon, the focus shifted to distillation. In his technical lecture, Weyermann® Master Distiller Philipp Schwarz explained the key aspects of distillation using Weyermann® malts. In the subsequent practical session, the participants followed each step of the distillation process using 100 % Weyermann® Isaria 1924® malt.
The first day concluded with a New Make and whisky tasting, which offered space for in-depth discussions on process management, raw material selection and aroma development. During the joint dinner at the Greifenklau brewery, the professional exchange continued in a relaxed atmosphere, complemented by Franconian brewing culture.
Insights into the maltings and the Weyermann® Brewing Manufactory
The second seminar day was dedicated to hands-on activities on site. During a comprehensive tour of the historic Weyermann® Specialty Malting facility, the participants received detailed insights into the entire production process – from raw grain to finished Weyermann® specialty malt.
In the subsequent visit to the Weyermann® Brewing Manufactory, direct professional exchange was at the centre of attention. Weyermann® Brewmaster Constantin Förtner provided practical insights into recipe development, process control and experiences from daily brewing operations and was available for questions and discussions.
