Weyermann® Expands Product Depth: Malt Flour Mill Opens Innovative Paths for Natural Baking Ingredients
With the commissioning of our new Weyermann® malt flour mill, we are taking a significant step toward the future: expanding our product portfolio to include malt flours which enable us to provide the aromatic diversity of our more than 90 malt varieties to the baking ingredients industry—naturally, sustainably, and tailor-made. Weyermann® specialty malts ground into flour with a wide range of flavor and color profiles that offer unique taste and color nuances without any artificial additives.
Our malts are high-quality natural products sourced from long-standing agricultural partners and are being processed using state-of-the-art malting technology. We rely on efficient, resource-saving processes that meet the highest quality standards.
At a time when consumers increasingly value transparency, sustainability, and individuality – our freshly milled malt flours provide an innovative and aromatic solution for the baking ingredients industry.
Tailor-Made Solutions for International Recipes
The new mill was developed with a clear service mindset: tailor-made products—individually adapted to the interest of our national and international customers. Whether specific malt blends, variable grind sizes, or flexible batch sizes—with our malt flour mill, we offer maximum adaptability.
Customers can choose from flexible packaging units ranging from 10–25 kg paper bags to big bags which contain up to 800 kg. Bakers can coordinate their recipes directly with us and receive freshly milled aroma malts exactly as desired.
We also offer customized solutions regarding organic certifications: our new mill is organically certified and can process association-certified goods such as Bioland or Demeter upon request. This allows us to meet the highest ecological standards and offer our customers maximum flexibility.
Two Strong Units – One Quality Promise
Weyermann® combines two specialized companies that complement each other and jointly ensure the highest quality and process reliability:
- Mich. Weyermann® GmbH & Co. KG is responsible for producing brewing, caramel, and roasted malts. It operates under the globally established ISO 9001 quality management system and supplies high-quality malt products that serve as the raw material base for further processing steps.
- Heinz Weyermann® Röstmalzbierbrauerei Bamberg GmbH includes the new malt flour mill as well as the namesake roasted malt beer brewery and is certified according to the internationally recognized food safety standard FSSC 22000. In this unit, our malts are refined—such as into malt flours—and specifically prepared for use in the food industry.

Quality and Sustainability as Guiding Principles
The highest quality and food safety standards are firmly anchored in our production processes at Weyermann®. The new malt flour mill, part of Heinz Weyermann®, meets the requirements of the internationally recognized FSSC 22000 certification, a globally acknowledged system for ensuring food safety.
FSSC 22000 is based on ISO standards and has been recognized by the Global Food Safety Initiative (GFSI) as equivalent to other internationally accepted food safety standards. For many of our customers, this certification is a key prerequisite for cooperation, especially in international trade and the processing industry. This enables us to meet the high demands placed along the entire food value chain.
We continuously develop our systems through a structured management system, regular internal and external audits, and ongoing optimization of our processes. This builds trust and ensures maximum product safety—from malt to flour.
At Weyermann®, sustainability is an integral part of our corporate philosophy. The new malt flour mill is largely powered by the photovoltaic system on its roof—a clear sign of our responsible use of resources.
In addition, the facility meets all emission guidelines and safety standards. All technical, safety-related, and environmental requirements were considered during implementation. Integration into our existing quality and environmental management system was carried out in a structured and forward-looking manner.
Project Timeline: Precision and Team Spirit
Construction and supply contracts were signed at the end of March 2024. Preparatory work began in August, followed by the construction of the silo system in September. Between October and December, the installation of the mill components and the packaging line took place.
The project was managed by Frank Lunkenbein, Head of Technical Project Management, who noted with a wink:
“I told the suppliers that the system had to be in place by Christmas—as a gift for our boss. That worked out pretty well.”
Final commissioning began in spring 2025.
Milling technology responsibility lies with Tobias Seidlein. The master miller joined the Weyermann® team specifically for the new malt flour mill. With his extensive expertise in milling technology, he oversaw the commissioning process and managed all technical operations. He is supported by a Weyermann® trained employee who knows the company’s internal processes and helped shape the operational implementation.
From Field to Table – A New Milestone
With the malt flour mill, Weyermann® expands its product depth: from cultivation to malting to milling, we now accompany our raw materials all the way to the finished product.

Future-Oriented Planning
The mill was designed to allow for a doubling of production capacity if demand increases. This investment is a clear commitment to our long-term strategy: we aim to continuously expand our product portfolio and respond flexibly to our customers’ needs.
